That's exactly what we're doing. Hasn't happened yet, but we have the same plan.
I asked our design person what was better for a kitchen, the click-type or the glue-down, given the possibility of spills or plumbing mishaps. She said go with the click, because even in the event of something bit like a dishwasher failure that ruined part of it, you could replace just that part, without having to take up a whole piece of roll or re-do a seam. Also, the click-type has that slight spring to it, so it's easier on the feet and back.

I would not do click. If you do glue down and it gets wet, you won't have to replace it because it won't have any problem. The click has particle board under it that swells up when it gets wet. You can also have that spring by putting a layer of cork under the marmoleum (which would make it even more water resistant (that's why they use cork in wine bottles).
The click is promoted because just about anyone can put it in. It's easy for the installers, but it is a problem if it gets wet! Find installers that know how to do the glue down process.
