I know it is summer. But I have just recently discovered how quick and easy it is to make soups and how convenient they are for leftovers. I can share a few we have loved:
Seared Broccoli and Potato Soup - http://cooking.nytimes.com/recipes/1017010-seared-broccoli-and-potato-soup My toddler ate 3 bowls of this for dinner tonight! Vegetarian tortilla soup - http://allrecipes.com/recipe/vegetarian-tortilla-soup/ I use fresh onions and peppers and add shredded soy chickn. Vegetarian chili - http://www.foodnetwork.com/recipes/emeril-lagasse/vegetarian-chili-recipe.html This is AMAZING. Been making it for years. I also threw together a soup last week with lentils, bulgur, stock, celery, onions, carrots and a few spices. It was delicious. Any other suggestions? |
