We use the dishwasher for everything except pots, so would like something that can hold massive pots

FWIW, from DCUM I learned to love the drying mat.

Another vote for a drying mat here. We have black counters and a black mat we leave out all the time, but easy to put away too. Does a fine job. I would never go back to a rack unless I had no dishwasher.

The oven. Just make sure nothing plastic, e.g., handles are in there and someone turns the oven on.

Why not just dry them and put them away? Takes 30 seconds...

I have the simple human rack. I wash a gazillion little plastic things for my kids every day. Love my drying rack.

OP here: I could do a dish mat but I have things like water bottles etc that I need to dry.

So, you don't actually use the dishwasher for everything except large pots?

Water bottles - rinse and dry on daily basis, no need to dry. Same with tea strainers, kettles etc.

How does a mat work if you have a lot of dishes? You can't stack them.
