I'm doing a small freezer meal workshop for my son and a few friends over the summer. I know that kids are more likely to eat whatever they help prepare and it's my first summer being a SAHM so I need fun things to fill the days. I plan to do all the protein cooking and chopping of produce, but the kids will mix ingredients and assemble their meals. I make each of these items but I don't necessarily have a tried and true recipe for all of them, which is where you come in! I need recipes for the following:
Lasagna I want to make the sauce from scratch and plan to use crushed tomatoes, but should I include a recipe with spinach (healthy!) or stick with the norm? There also seems to be much debate about ricotta vs cottage cheese. If you prefer one over the other, why? All beef or a mix of beef & sausage? Turkey Chili - I never measure when I make chili, it's all dump this, add that, and so on. Measurements are needed! Chicken Enchiladas French Toast Casserole I realize I'm asking a lot so if you have input on just one recipe, or a link, that would be great. When I make freezer meals, they're all in a large ziploc so any tips for thawing items like the lasagna & enchiladas and how long to bake would be great! The meals (except the chili) will be sent home in a foil pan. |
| are you looking for things that will be cooked first then frozen or assembled, frozen, then cooked at at later time? |
| Cooked by them, but I will be cooking all the proteins ahead of time. So like the meat for the enchiladas, chili & lasagna will be cooked. Ideally, enchiladas will be rolled and sauce poured over so they're ready to go in the oven. The french toast casserole is the only one that I might need to rethink. They're making personal pizzas too (going to vacuum seal those) so I can probably eliminate one or replace the casserole if necessary but I like the idea of a breakfast item. |
