Red wine in regular refrigerator

Anonymous
I have two opened bottles of Cab and one opened Red Zin that are leftover from last night's gathering at my place. I live alone and couldn't drink all of this myself but don't want to waste it. Should I put it in the refrigerator, even though it is red wine?

Yes. Treat it like grape juice. Once it is opened and exposed to the air, it can grow bacteria. Pour yourself a glass right when you get home and let it warm up slightly and be just perfect in this weather.

+2.

The glass you drink will come up to temperature in about 15-20 min. after you pour it. The rest of the bottle will last days longer in the fridge than it would if you keep it out.

Also, if the two bottles of Cab are the same, consolidate them. One full bottle will have less surface area exposed to oxygen than two half-full bottles. It's exposure to oxygen that will make them fade over several days to a week.

BTW, even refrigerated, they're not going to last more than a week once open. If you won't finish them in a week, find someone to share them with, or start looking for recipes to cook with them. (They're probably OK to cook with even up to 10 days if you keep them refrigerated and re-corked. Just taste a bit and you'll know whether it's something you want to cook with or not.)

Refrigerated red wine - yuck, yuck, yuck!

Just throw it away tomorrow.

They'll last longer if you use a Vacu-Vin or other oxygen-sucking apparatus. With oxygen out of the bottle, the wine stays fresher longer.

If you freeze it into ice cubes, it can be used for cooking.
