Ideas for meals to pack on road trip (not sandwiches)

About to travel halfway across the country (from Cali to Tejas) in my car and to avoid eating a ton of fast food crap I want to pack some meals in a small cooler.

However, i'm not a big fan of sandwiches, at all really. I dont really like wraps much either, unless it's a lettuce wrap (all the processed bread/tortillas dont interest me)

Any ideas for meals I can pack in the cooler and eat one handed, that arent a sandwich or wrap?

(note: for the most bomb ass wrap ever I would make an exception but it would have to be amazing)

I like frozen grapes. They're easy to eat with one hand, keep you hydrated, and they have the added benefit of working as ice packs early on without wasting space for ice packs.

I may try that, although I have some tooth sensitivity, so I may not freeze them all the way. Thanks!

I like just containers of different things. I make cheese quesadillas and cut them up into pieces (good cold), pepperoni, slices of cheese, grapes, crackers, cherry tomatoes, pretzels, sunflower seeds, granola, trail mix, etc etc. This is how we always picnic as a family. We all just pass around the bags of munchies. Perfect for car rides, too!

Hard boiled eggs, sliced vegetables & hummus.

Crackers, presliced salami, and presliced cheese (store them in separate ziplock bags so the crackers don't get gross).

Cold roasted asparagus spears, wrapped in prosciutto. Or cantaloupe cubes and prosciutto.

Fill a bunch of celery sticks with peanut butter.

Some of these may seem more like snacks than meals, but as long as there's a good balance of protein and vegetables (and enough food) it doesn't really matter.

I should mention, and this makes it a lot harder.

I can't cook anything, as my apartment doesn't have a kitchen (it's called a bachelor apartment, the rent is cheaper).

Soooo that makes it a lot harder, asparagus and such are out of the realm of possibility, unfortunately

I have a small toaster oven that I can use but I don't like to cook too much in here because I dont have a sink or washing machine or anything

I think you basically will have to eat sandwiches if you want to eat while driving. If you can stop, I would pack salads in individual containers with chick peas and feta and maybe some chicken or hard boiled eggs which you can buy pre-cooked. Bring a bottle of dressing to add right before you eat.

Stop at grocery stores instead of fast food places along the way. You can go to the salad bar and they also have decent prepared foods made fresh that day. With a cooler, you can keep them to serve for mulitple meals a day.

OK, you said exceptions for a "bomb ass" wrap so I will give you my idea.

Rotiserie chicken, on wheat bread, with mustard and pickled red peppers. It's great.

Find a supermarket that does prepared foods. Chicken drumsticks, dolmades, kibbeh, slice of quiche, foccacia, cooked corn, etc.

You can also stock up at similar places on your trip.
