I'm a Very Picky Eater.
I like broth-based soups that are not spicy (wonton soup, chicken noodle, ramen). I like noodles in soup. I like chicken or shrimp or suppose beef would be fine (though I've never had that in soup). I do NOT like anything spicy. Based on all this, would I like pho? |
Pho is not spicy. It has a lot of different spices in it, but not spicy like hot. It's delicious. You can get different types of meat in it (or no meat) but I believe beef is traditional. |

I am extremely picky and do not like soup and love it. I get the vegetarian with veggie broth. Try it. Not spicy. Some places have a chicken based broth. |
Pho is basically Vietnamese ramen. Broth, noodles and a meat topping, usually with a few herbs on top. About as basic as can be. |

Just try it. The spices tend to be star anise, clove, cinnamon and others. I am not a huge fan because of the star anise and I am not a picky eater. I will eat it but it's not really my thing. |

You can choose what type of meat you want. Thinly sliced beef is traditional (and delicious), but you could also get chicken, seafood or vegetarian. If you do choose beef, you can choose different cuts - if you're generally picky, start with something like round steak or brisket. You can add toppings like basil yourself, depending on what flavors you like. Skip the jalapeƱos and it won't be spicy at all, but it is flavorful. |
There was a fascinating article in Smithsonian Magazine last fall about picky eating. A lot of it is physiological. Some people taste bitterness more strongly, etc. they are even identifying specific genes. |
Pho can be pretty simple. thin sliced beef with ramen noodles. just don't ask for the more exotic meats the first time. |
OP "supposes beef would be fine." She is not even that comfortable trying beef in her soup. I don't think that exotic meats are ever going to be an option. |
I LOVE pho. Beef, chicken, whatever. I moved from the DC area, but try Viet House in Alexandria. |
