We keep chopped onions in our fridge all the time. Never a problem. Different levels of sensitivity, I guess.
If you're worried, you could put it in a glass-lok container instead of plastic or zip-loc. |

Onions, peppers, carrots, etc can keep for days. I usually have either half an onion or some chopped onion in my fridge at all times...and I've never smelled it.
The one veg you want to not cut ahead of time is potato. They can only last about 12 hrs and really need to be submerged in water. Avocado too, but that's really a fruit... |

Yes, you can do this, and with the onions, too. I am like PP and often have a half-sliced onion in my fridge. I put it in a sandwich bag.
