can i cut peppers and onions the night before to cook with the next day?

i won't have time the next day. if i cut them the night before, will they wilt or dry out? any storage recommendations?

Definiitely. Zip lock bag will do it.

Cut onions in your refrigerator is a mistake - smells even when in multiple bags or containers.

I'd definitely cut the other stuff in advance though!

Peppers can even been frozen.

You can prep the onions (peel the skins off) and cut it before you use if you are that sensitive to smell.

We keep chopped onions in our fridge all the time. Never a problem. Different levels of sensitivity, I guess.
If you're worried, you could put it in a glass-lok container instead of plastic or zip-loc.

I keep cut onions and peppers in the fridge for days for salad toppings.

Yes, I do stuff like this all the time. I haven't had a problem with the onions smelling, but I use the Pyrex glass bowls with the airtight lids so maybe that's why.

Agree. In a ziplock bag it will smell, but Pyrex with lid works well.

I usually cut up a whole bunch of veggies in Sunday to use in various things through the week. I store in Pyrex like many PPs, and have no problem with everything staying fresh for the full work week.

Yes, you may. Store in closed bags/containers though. Cut onions are notorious for attracting whatever bacteria is living in your fridge.

Onions, peppers, carrots, etc can keep for days. I usually have either half an onion or some chopped onion in my fridge at all times...and I've never smelled it.

The one veg you want to not cut ahead of time is potato. They can only last about 12 hrs and really need to be submerged in water.

Avocado too, but that's really a fruit...

Yes, you can do this, and with the onions, too. I am like PP and often have a half-sliced onion in my fridge. I put it in a sandwich bag.

I love cut up peppers and onions so I keep them in a bowl with lid in the fridge. Doesn’t hurt anything else for few days.
