Google Diane's dad's sandwich NPR. I have always wanted to try it, but apparently it must be assembled and eaten in precisely the order described or it won't "work."

Two slices of toast. Melt cheese on one.

On the other, assemble a slice of lettuce, a slice of tomato, and some sliced pickled beets. Add a fried egg. Spread sweet chili sauce on the melted cheese, and top the sandwich with this slice.

Heaven.

Good quality toasted wheat with humus, honey roasted turkey, half an avocado, cucumber and red pepper. Can add cheese if you like.

I do this but with sprouts and shaved carrot instead of cucumber. Great with Harvarti!

Bacon, lettuce, oven-roasted tomato, a handful of fresh basil, and a very crispy fried egg (with a runny yolk), on toasted sourdough with mayo.

Home made bacon cheddar ranch dip on toasted sourdough with sliced tomatoes, or gobs of watercress. The dip is thick enough to adhere all sorts of veggie bits that would normally be difficult to manage. So, even sliced radishes work if watercress is unavailable.
I go open-faced to cut down on carbs.

Sandwiches are such good things.

One slice coated with tzatziki, one with harissa. add turkey, lettuce, tomato.
