Need ideas for how to spice up leftover curry

Last night we made a winter vegetable curry for dinner -
Califlower, Sweet Potatoes, Lentils, Tomoatoes

We have a lot left over and was wondering if anyone had any ideas how to spice it up for dinner tonight?

winter vegetable curry soup? or freeze it....

If it's a dry curry, maybe you can mince up the veggies, shape it into balls, and fry them. (If you have chickpea flour, you can lightly coat them with it before frying.) If it's a runny curry, maybe you can turn the sauce into a creamy yogurt sauce and add some spinach & green chilis. If you had it with rice last night, have it with parathas (Whole Foods sells good ones) or rotis.

Do you eat meat? If so, maybe add a bunch of cut up a turkey sausage.

Here is the original recipe (It is from memory so if I missed anything I will update it this evening)

In a lg stock pot saute 1 onion
Add
2 sweet potatoes (cut into about 1/4 inch pieces)
2 cans diced tomatoes including the juices
1 cup lentils
1 califlower (florets)
1 1/2 c water
1 T Curry powder
2 t ground ginger
1 t salt

bring to boil - simmer until sweet potatoes can be pierced w a fork (around 30 min)

I know this sounds unconventional, but I made a curry this week using butternut squash as the primary ingredient, and I ended up spicing it up with black beans our Guatemalan au pair prepared. It was delicious and I'm having it again tonight. I also added leftover barley and brussels sprouts, but ran out of those. Another night I added cut up tofu. I was thinking about shrimp too. The thing about curries is that the flavor is so strong that you can probably add just about any other food you like, and it will still be good.
