What to do with 7 day old baked sweet potatoes?

Toss? Freeze for use in baked goods or toddler food? Use tonight and make muffins or something?

I baked them last weekend and we only used them one night. The stomach bug hit us 3 days later and I hate to waste them.

OP here. Ha ha, okay. Thank you! I feel guilty tossing things and we usually don't have this problem. I really didn't feel like dealing with them tonight and now I don't feel bad dumping them right in the trash.

Nah, ate them the very next night. So I think we're okay. We both work full time so I usually bake sweet potatoes and roast big trays of veggies to get us thru the first few days of the week.

+1 I hear people talking about having 'stomach flu' all the time, and I'm willing to bet that a lot of it is caused by spoiled food.

Yes but OP said he/she ate the potatoes the very next day so I doubt this is the case. What really irks me is people who eat old mayo based stuff or seafood. They're asking for trouble!

You know mayo is actually not prone to spoiling quickly? The commercial varieties are preserved to provide shelf life at stores. Seafood, yes, that spoils super quick. The potato salad at the potluck got you because of the potatoes, not the mayo.
