My favorite way to make hard boiled eggs:

Steam eggs over a small amount of boiling water for 10 minutes, then move to ice bath. I steam in my asparagus pot, buy you can use any steamer set-up.

At 10 minutes the yolks are a little soft, so if you want them really cooked through, go with 12 minutes, then ice bath.

This is so much easier than heating up a big pot of water. And with that method, you have to catch the moment when it starts to boil, which is easy to miss if you're doing anything else at the same time.

There are tons of ways.

Meat-free burgers, nuggets, sandwich filling, etc.

Sunflower or pumpkin seed butter, grind your own if necessary.

Any and all lentils, peas and beans.

Eggs in any and all varieties.

Two weeks of lunches, supplement with cut veggies and fruit. All prep happens the night before, and there's zero reason that you can't prep 2-3 bags of fruit/veg twice a week, at night when you're not rushed. *=Freeze three portions, pull out of the freezer the night before, but with 4 portions, you're only cooking 1 per week.

*Lentils cooked in coconut milk, tossed with spinach
*Quinoa/amaranth pasta cooked in veggie water with tomato sauce
*Taco bowls: black beans, refried pinto beans, sauteed mushrooms/onions/peppers. Add avocado, tomato, spinach and black olives the morning of.
Black bean/veggie/chickpea/soy burger (premade)
*Quinoa cooked in tomato juice. Toss with avocado and sunflower seeds morning of.
*White chili, sub garbanzo beans for chicken
Grilled cheese (havarti or muenster on buckwheat bread), *tomato soup
Grilled egg sandwich
*Frittata
*Veggie chili made with pintos, kidneys, black beans and fake hamburger crumbles

If you want to add dairy the morning of, fine. It takes 2 minutes to scoop out sour cream or greek yogurt, sprinkle shredded cheese, and that's only if there's a child underfoot.
