19 years old, the summer between freshman and sophomore years of college, I worked as a fry cook at a Captain D's restaurant (a Southern chain comparable to a Long John Silvers). Summer in Orlando, the temperature outside was always over 100. The temperature in the kitchen was always about 15-20 degrees higher than outside because of the industrial fryers that we had around the kitchen (we had a bank of 12 fryers that were all set at around 400 degrees). There was a permanent coating of grease on everything including the floors. It was like working on a lake of frozen ice. And we had to rush around and do everything fast because it was fast food. So, we ran and slid around the kitchen. I was probably better at sliding than the best clay court tennis players. I had many hot oil burns on my arms. I worked there 4 months and the scars on my forearms lasted over 2 years after I stopped working there. It was virtually impossible to get clothes clean from all of that oil (imagine the smell of rancid french fries, etc). I had two sets of work clothes. One to wear and one to wash so that I wouldn't ruin any more clothes than that. After the 4 months there, I trashed all of the clothes and the shoes that were destroyed. I also kept a set of old towels in the car that went over the seats and floor to keep my clothes from destroying the upholstery in the car. These were washed every night with the clothes because the old oil would soak through them if they weren't washed daily. All this for 5 cents over minimum wage. I also worked long shifts and "closing" shift included and hour and a half cleaning the restaurant including mopping all of the floors and only the first half hour was "on the clock", so I usually worked an hour every night unpaid. We closed at 11pm, so I was lucky if I left by 12:30am after a 10 hour shift, plus hour and a half cleaning. Do you know how much fun it is to clean the oil from 12 deep fryers? We had this special vacuum that filtered the oil. You emptied the first fryer (which was the oldest), then filtered the second one into the first, then the third into the second, etc. Then you went and a jumbo block of lard (they were HEAVY) and had to put it into the 12th fryer to melt for the next day.
