I made a batch of vegan pumpkin pancakes over the weekend - very easy, no sugar, uses soy milk (protein) and both my 3 yo and my 10 mo loved them. http://recipes.sparkpeople.com/recipe-detail.asp?recipe=139827

Has anyone been sucessful at freezing belgian waffles (that's the waffle maker we own)? Every time I try they are terrible when re-heated. I've tried in toaster and microwave - both times terrible results. Any tips?

This is the one I use: http://www.foodnetwork.com/recipes/alton-brown/overnight-oatmeal-recipe/index.html. I love steel cut oats.

In the summer, when I want filling but cold, I'll pour milk over rolled oats first thing in the morning so it can sit for about ten minutes while I get ready. It's nice, gets soft but still has some chew. Sometimes I'll throw in raisins at the start, or fresh fruit at the end.

My other go-to lately is Greek yogurt - I know it's the new popular thing but I like the texture so much more than regular - with fresh fruit, a little granola or cereal, sliced almonds, maybe a drizzle of honey.
