What is there to explain? He told him to leave the gun behind so he wouldn’t be caught with it on him, but to take the cannoli, presumably because ghey are delicious.

The more intentional meaning is… we will leave this mess/the murder behind to show we protect the family.
The cannoli was made by his wife and she represented family. They protect the family.
