Raw potatoes can make you very sick, especially the eyes, spouts, or green parts. I know a single father who prepared potatoes for himself and his daughter, but undercooked them. They both got very sick - he was hospitalized for weeks and was out of work for months. PP again -- I realized I wrote "single dad" which had nothing to do with his cooking and I didn't mean it in a critical way about his parenting -- it's just that it has always stuck in my mind because he was such a good guy, trying so hard in really difficult circumstances, and then his life was upended by this (they had very few resources and the financial impact was devastating). |

Raw potatos makes me think of the scene in gone with the wind where she’s starving and finds one single potato left in the field so eats it on her knees and then vows as god is her witness she will never go hungry again.
My dad always stressed the part about potato eyes because he had to peel potatoes on the army and apparently that aaa a big deal—carving out all the eyes before you chopped them. Or he said you could just leave them on the peeler forever until all the eyes were gone (the lazy way). As a kid I always liked popping out the eyes on the potatos for my mom. |
