Is it just me or do all barbecue joints basically taste the same?

I used to think that. But, it's about how it is cooked (real fire vs not), the type of meat, how long they cook the meat. If they are cooked well, no sauce is needed. But the sauces are great.
Also, the BBQ from other countries are different.

Cheap throwaway cuts of meat + "smoke" & sauce = charge filet mignon prices

I'd rather just have a good petite filet.

If you’re paying filet mignon prices for BBQ, you’re in the wrong place. Get out of of DC/NoVa, head south.

You’re partially right. The meats are on the cheaper side, the art for good bbq is real slow cooking that breaks down the meat and imparts a good smoke flavor.

Filet isn’t a great cut of steak. Very little flavor. I’m

I think it's a scam. And you have no real way of knowing what the heck they're doing in the back whether it's "real" or not.

Laws don't allow the operation, don't allow the install of the equipment. Some places, some businesses may be "grandfathered" in. Same with a proper Pizza Oven.. You'll find those, more that have been grandfathered in other more northern states.

I can taste the fake smoke and it tastes chemical. I grew up with NC bbq which is smoked and not as fatty as what I've found in this area. The bbq in VA seems to be made from the leftover fat pieces.

You just gave yourself away. That is the most pathetic of the steaks and any decent chef would know you're a fool.
