It sounds like sensory processing issues + anxiety. I know, OP, you're going to want to say it's just her personality and she's a special and unique flower blooming in her own wonderful way. And she is special and unique and nobody wants to take that from her. But consider that this behavior belies a child who is really struggling and has some actual skill deficiencies that will make life harder and harder as she grows.
