What should I make with my tub of kimchi?

I have been eating kimchi lately like crazy, so I bought a tub at Costco, but now I've run out of ideas on what to make with it. I have been making soup and fried rice, but now I need a new idea or two. Help me out with your favorite recipes or ways to eat this kimchi.

It's a side dish to accompany a main dish. It will go with anything and rice. You don't have to cook with it. If you have steak, add rice and a side of kimchi. Chicken + rice & side a kimchi. Stir fry + rice & side of kimchi.

If it's close to fermenting, make kimchee jjigae. Especially great in the winter. My mouth is watering now.

Other than kimchi fried rice & kimchi soup, you can use it as a topping for noodle soup or as an ingredient for Korean pancake.

Someone suggested I put it on a grilled cheese sandwich. Haven't tried it yet but it sounds good.

You mean actually put kimchi ON a grill cheese or serve it as a side dish?

I think this sounds delicious and/or kimchi on a tuna melt. I would also try to make a Rueben.

Bibimbap!! Each bowl gets a bunch of white rice, then, in small sections around the bowl, sautéed greens, shredded carrots, bean sprouts, bulgogi meat, kimchi, and then a fried egg on top!

addicted to kimchi. Does the costco version have live cultures, or is it pasteurized? we used to get a really good homemade one at eastern market.
