Need ideas for meals that work for both vegetarians and meat eaters

I'm vegetarian and DH is not.

I'm out of ideas and tired of our old standbys - taco night, pasta night, pizza night.

Anyone out there with a similar household? What do you have for dinner? Do the adults make their own meals?

Neither of us is vegetarian--but we eat lots of vegetarian meals. Right now we're in soup mode. Some favorites are (some of these call for chicken broth, but just sub in veggie broth):

We also eat a lot of veggie risottos and Indian food.

i'd imagine you can do many things veg/non veg - like make a stir fry, but stir fry the meat separately and add it on top and top with a bit more sauce, etc.

we are not veg but I use meat sparingly or as a topping/add in, rather as the main focus of the meal. you can do a grilled cheese and tomato soup (I have an amazing creamless cream of tomato soup that takes 10 min), and put ham or a meet in DH's sandwich..

I make a veggie lasagna sometimes. I usually mix tofu, squash, mushrooms, eggplant, onions, and a bottle of pasta sauce. I use those flat lasagna pieces on the bottom and top to make it lasagna-ish (and put pasta sauce on the bottom of the pan and then on the top. I think I baked it for like 45 min at 350 wh tin foil on top. I then put mozzerella cheese on top and baked it for another 15 minutes.

We eat vegetarian most of the time. Once a week or so there's chicken, and I'll make a protein packed side as my dinner along with another veggie or salad - quinoa, bean salad etc. Chili. Quiche. Bean tortillas. Lo mein, or stir fry over noodles (this is good to serve w meat on the side). Tonight was both chicken and tofu. Homemade veg burgers (sometimes they eat the veg ones, sometimes a regular burger or turkey burger). Veggie pot pie. Felafel.

Ok, so I'm vegetarian (20+ years), and my husband isn't. I do all the cooking and shopping. And to be honest, I'm a darn good cook. I also pick recipes that I know he will like (he's west coast, and I'm very old world). I think that by picking his "style" of cuisine also takes the focus away from it being veg. But, I will only cook vegetarian. He doesn't mind at all. Quite thrilled in fact. Random things I've served the past week or two--

Gyoza w ramen salad
Veg sushi
Fajitas
Vegetarian bollito
Rachel ray sloppy lasagne (made w Morningstar crumble)
Mushroom terrine w/cheese plate
Veg sausage and peppers w rotini
Yuan fu take out


Also, when we eat out, he can order meat, and he gets lunch at work at least twice a week, he can eat meat then. Having veg dinners won't kill him.

Visit the blog Kitchen Treaty - blogger is veg and her husband isn't. She has a lot of recipes where you can add meat or modify. It's great.

OP, what is the framework of your vegetarianism? Are you ovo lacto, vegan. Etc.?

I'm in the same boat. DH isn't open minded at all about his food so we usually cook 2 meals, or I eat the sides I make (usually roasted veggies) as my meal alongside a salad.

I would love to have more meals in our rotation besides the same 3 you mentioned.

Cook a big batch of ground beef, freeze in individual portions. Make veg chili and add a portion of cooked ground beef to his. Or baked potatoes with lots of toppings, cooked ground beef available for him.

Set up a grill or broiler pan with a steak, portobello mushroom or two, some sliced eggplant. Roast it all at the same time, steak for him, roasted veggies for you.

Burgers - beef for him, veggie for you.

Try the thug kitchen, all veggie and non veggie will eat with no problems. Everything is pretty simple and easy.
