| Do you have a microwave? I soften the butter on the DEFROST setting for 30 seconds. That makes the butter easier to stir but does not melt it. You can also just leave it out for a few hours to soften. Most cookies can be made without a mixer. There are some that have really thick batters that are difficult to stir. Those you can mix with your clean hands. Have fun. |

Leaving it out is the best (microwaves leave too-soft and too-cold pockets) but a lot of microwaves have a "soften/melt" setting just for butter now, and it's pretty accurate! |

I do not have a mixer and have made sponges and whipped cream, so cookies should be not be too difficult! DH has made mayonnaise by hand. |
