Your favorite quick low fat recipes

Please share my husband and I have started dieting and exercising and we need some more tried and true low fat recipes to add to the rotation. Ideally something that takes 30 minutes or less to prepare but I'm find with oven time longer than that it's just the prep time needs to be under 30 minutes. We eat veggie homemade pizzas on whole wheat, lots of soups, turkey tacos and need some more variety. We have also exausted a lot of the weight watchers recipes which are all really good! Thanks!

Seafood is your friend. Most cuts of fish can be prepped and cooked in just a few minutes (roasted for lowest-fat; pan-cooked in a spritz of olive oil if you need it faster). Very heart-healthy!

Roasted salmon:
Place individual fillets in an oven-safe glass or ceramic dish. Squeeze lemon juice over the top; sprinkle with coarse salt and whatever herbs you like (tarragon is great, or basil, or thyme). Roast at 400 deg. Timing will depend on the size of the fillets, but usually 15-30 minutes. Roast a tray of veggies while you have the oven on - salmon and broccoli are a great combination.

Pan-seared scallops:
Warm a Tb of olive oil in a pan. Dredge the scallops in a mixture of flour (or ground almonds), salt and pepper. Sear over med-high heat to get a nice crust, then reduce heat to med-low until cooked through. Serve on a bed of sauteed spinach, with a wedge of lemon.

I tend to like seafood prepared simply so that the flavors of the fish really come through (and to cut down on added sugar from sauces), but there are a million ways to vary the flavor through spices and herbs.

Low carb seems to be trumping low fat in all the latest studies. Maybe look for some low-carb recipes? Low-fat is generally inherently high carb, which is a nutritional disaster.
