| I want to do lentils and roasted root vegetables. Does anyone have a tried and true recipe. Am ok with leaving out root vegetables and doing something else if that tastes better. |

I like this one. But I have always used butternut squash instead of acorn squash. And I use thyme, too.

This salad is amazing. You can add or subtract stuff too-- I usually don't have mint but do add toasted walnuts. It's almost more of a meal, though.
