Easy Friday Night dinner--Ideas Please

I've used my pizza card already this week. Still not motivated to be in the kitchen tonight. What's an easy dinner for a Friday night?

Grilled cheese with pickles and chips

Bake the chicken breast

Onions and peppers in a skillet with a bit of EVOO and splash of soy sauce.

I'm doing pancakes, with microwaved pre-cooked sausage on the side. Breakfast for dinner, as a PP said. I feel no guilt about serving no veggies one night a week (especially because the kids eat them at lunch).

Easy and one pan - we LOVE this.

Saute some onions in a bit of olive oil. As they are browning, throw in a box of pirogues - any flavor. Fry for about 3 minutes on one side, then flip. Toss in some kielbasa - cut up. Once the kielbasa is warmed, throw in some fresh spinach, cover, let the spinach wilt, and you have a great meal. Take about 10 minutes from start to finish and only dirties one pan!!!

Otherwise -
Chop an onion and a potato, toss with olive oil, put in a roasting pan. Add sliced kielbasa or other sausage. Chop up some cabbage and add that too if you like. Roast the whole thing at 350 for about 30 minutes.

Or -
French toast with sauteed apple slices. Add sausage or scrambled eggs if you want more protein.

Or -
A stir fry. Chop up some meat (chicken, pork, beef, whatever) and brown it in a skillet. Add whatever veggies you have on hand. Sprinkle on some soy sauce, or get fancy and use an actual stir fry sauce. Serve over rice or noodles. Great way to use up bits and pieces of leftovers.

Layer ravioli with ricotta cheese (mix in some seasoning and shredded cheese), top with red sauce, bake until bubbly.

I love this thread! We have one pizza card a week, which can be extended given the circumstances. I always keep something frozen on hand, like tonight will be TJ's Orange Chicken and Jasmine rice. However DH and I have had a rough week, but the last hour or so work wise for me has been fantastic, so I'm rethinking dinner... Pizza/beer card may be played.
