Crock Pot Meals That Don't Suck

I've made several crockpot meals in the last year, and the only ones that were any good were the BBQ ribs and beef stew, both from Slow Cooker Revolution/Cooks Illustrated. All the chicken ones I tried were terrible -- so dry and the texture was awful. But I really want to keep using my slow cooker! It's such a great concept. Any other ideas for recipes that are actual tasty?

Short ribs stew.

My chicken stew doesn't come out dry. But I brown it slightly first (same for any meat I put in the crockpot). I use chicken thigh meat. I find chicken breast meat too dry.

Not Your Mother's Slow Cooker Cookbook is a great resource. I've had great luck with a number of recipes from it.

Soups are really good - especially bean soups. I find chicken is not very good in a slow cooker. Pork roasts and flank steak are good - you can shred them and make pulled pork or tacos.

I also dislike chicken in the slow cooker.

I;ve always used the crockpot for this one, no searing the meat beforehand. It's divine. I promise, no need to use the overn... 8-10 hours on low in the crockpot is just fine.

I have a recipe with chicken and it is honestly my family’s favorite. The chicken is wonderful! It is called “Angel Chicken” because you are supposed to use angel hair pasta. But, I use egg noodles.

Angel Chicken

6 boneless chicken breasts
¼ c butter
1 7-oz pkg. Italian salad dressing mix
1 103/4 oz can golden mushroom soup
½ c dry white wine
½ of 8-oz tub cream of cheese with chives and onions
Hot cooked pasta
Snipped fresh chives (optional)

Place chicken in crock pot. In saucepan, melt butter. Stir in Italian seasoning mix. Stir in mushroom soup, white wine, and cream cheese. Pour over chicken. Cover and cook on low heat for 4-5 hours. Serve chicken over pasta.

I use a lot of recipes from 365 Crockpot. Google her. Her recipes are awesome. And easy.

Also, chicken can be tricky in the crockpot, especially breast meat. It should usually only cook for 5 or so hours rather than a 8+ hrs of a full work day. However, I like how a whole chicken turns out after cooking on low all day.

Chicken tikka masala with chicken thighs. My favorite. I use the recipe in All Against Grain, but you probably find a good one online.
