Easy vegetarian recipes for someone who hates to cook?

Can anyone recommend a cookbook or other source for good vegetarian recipes? In particular, I'm looking for fast and easy. Does such an animal even exist?

Look for dump recipes. I saw one the other day - put premade ravioli in a lasagna pan, dump a bag of baby spinach on top, cover with a jar of marinara and top off with a bag of mozzerella. Bake for 30 min at 400 and voila - dump lasagna. Add a salad and garlic bread.

Also, invest in a pressure cooker/slow cooker. Makes things go very fast. I love my Instantpot which is both (and a steamer, rice cooker and sauté-r)

You want a couple of techniques, plus some ways to vary them, e.g.
pasta or couscous or bulgur
with
canned beans
and
2 frozen vegetables

Seasoned with tomato sauce & parmesan, or soy sauce, or curry (etc.)

Bittman's "How to Cook everything vegetarian" is about as awesome of a veggie cookbook as there is. It has everything from basic to complicated, with options for vegans. I love that at the end of most recipes, he offers always that you can spruce up the exact same thing. I love to cook, but it's a great staple in any kitchen.

I haven't seen the app, but imagine it's just as great.

There are also a lot of great veggie slow cooker cookbooks.. Most of those recipes could easily be made on the stovetop.

I really like mollie katzen's simple suppers. She has some good, basic recipes like baked tofu (that actually tastes good). My fave is her Navajo stew recipe. It's great with her turmeric rice and cilantro yogurt. I'd suggest checking some cookbooks out from the library. I have mark bittman's vb6 cookbook and I'm not impressed. I personally think he is overrated. Lots of good recipes on the web. Check out foodgawker or tastespotting.

Bittman and Mollie Katzen both have great recipes, and the Budget Bytes blog (http://www.budgetbytes.com/category/recipes/vegetarian/) has a ton of excellent, simple recipes as well.

Stir fry, chow mein, rice and pasta bakes.

Just toss in tofu or meat substitute instead of meat.

Eggplant parmesan - yum.

Made that tonight, always delicious! Good with a spoon or as a dip with chips. I also sprinkle a little cheese and sour cream over the top.
