This 2nd pregnancy has me exhausted! I scrambled for dinner tonight and made a real conglomeration of food. I made some baked tofu slice, quinao w/ mixed veggies and Italian herbs in the pressure cooker and a side of sautéed baby spinach with garlic, raisins and slivered almonds.
DH is a sauce type of guy and will lament the "dryness" of the meal. What, if anything, can I fix up? Marinara sauce would work except I have none. Oh and it has to be dairy free and vegetarian (eggs are ok but I think I have 1). Any help? Thanks! |

| Thanks for the ideas! I made a (very) modified romasco with cherry tomatoes, walnuts, garlic and olives. It's pretty good and goes well with the tofu! |

| I was vegan through two pregnancies and while breastfeeding, and was fine. I ate the hell out of this: http://www.food.com/recipe/creamy-tofu-savory-sauce-277729. It probably wouldn't have been great with Italian herbs, but excellent on tofu, beans, grains, and veg in general. (I love it with roasted chickpeas, sauteed greens, and rice or quinoa.) Also, Deborah Madison has a quick peanut sauce recipe, which is delicious, and I've yet to meet a tahini sauce that I didn't like. Take care! |
I am! Well pretty much anyway . I've been vegetarian all my life. I developed an intolerance to dairy my first pregnancy and though i'll eat eggs if they are baked into something, I can't stand the smell of them cooked otherwise. The doctors are fine with it and so am I.
