I tried the one from Martha Stewart and it was terrible. Would love your recipes!

What do you mean by "healthy"? Low fat, low calorie, etc.? Or made with organic/whole foods?

I choose the latter and my favorite recipe is always this one:

Obviously you can play with the add-ins and spices to suit your preferences.

i make this ALL the time with my extra bananas in the freezer: no white flour or sugar.

3 ripe bananas
2 cups rolled oats
1 cup dates, pitted and chopped
1/3 cup vegetable oil
1 teaspoon vanilla extract

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, mash the bananas. Stir in oats, dates, oil, and vanilla. Mix well, and allow to sit for 15 minutes. Drop by teaspoonfuls onto an ungreased cookie sheet.
3. Bake for 20 minutes in the preheated oven, or until lightly brown.

King Arthur flour has a basic whole-grain cookie recipe on their website. It uses oats, and you could add raisins for a traditional oatmeal cookie type of thing. It's a good and reasonably healthy recipe.

PP here - I usually put chocolate chips (a mix of milk and dark chocolate chips) instead of dates

I just posted this in another thread: http://www.food.com/recipe/that-fabulous-tahini-cookie-315101. It has plenty of honey in it, so not a low-sugar recipe, but unbelievably delicious.
