| Having some trouble deciding what to make, and in a bit of a rut. Besides pasta or rice, what vegetarian meals could I make? Difficulty: warm (so no salads). |
| Lentil soups, or any other bean soups. |

This was posted recently. I made it for a party and everyone raved about it. I added extra jalapeno and cayenne, because I like spicy.

Some of the recipes I make when I need a vegetarian dish:
Ratatouille (not my exact recipe, but close): http://www.epicurious.com/recipes/food/views/Ratatouille-108350 Curried Cauliflower, Potato and Peas: http://www.foodandwine.com/recipes/cauliflower-potato-and-pea-curry Lentil Barley Stew (not exactly, but close): http://articles.latimes.com/2010/nov/25/food/la-fo-hanukkahrec2-20101125 |

Roasted root vegetables (cube beets, butternut and purple potatoes and roast with a little olive oil. Add parsley, red onion an feta to taste: delicious)
I also do a warm quinoa and roasted butternut and broccoli grain salad. |

No recipes (still trying to find winners!) but ideas are:
eggplant parmesan? veggie meatloaf? Vegetarian shephard's pie? lentil tacos? |
I don't make it as much anymore (my wife doesn't like eggplant very much), but I used to make the eggplant parmesan from the original Moosewood cookbook: http://www.corkboard.it/posting/show/13268-moosewood-cookbook-eggplant-parmesan-recipe |
|
Sautéed pepper and onions served as subs one night as fajitas another.
Veggie enchiladas or burritos |
This recipe is awesome! I make it at least once a month. |
The original Moosewood and the Enchanted Broccoli Forest both have great casserole-type recipes. This one is also delicious: http://www.molliekatzen.com/recipes/recipe.php?recipe=arabian_casserole |
| On Kojo the other day, there was a chef who just published a cookbook on Mediterranean vegetarian cooking. I thought the recipes they mentioned all looked great: http://thekojonnamdishow.org/shows/2014-10-29/mediterranean_vegetarian_feasts_with_aglaia_kremezi |
Are you the one who posted it in the thread about the chili party recently? If so, thank you! |

Everyday yellow dal (Smitten Kitchen recipe) served with/in...popovers! Delightful.

Probably! I feel like I recommend this recipe all the time! I am so glad you liked it! |
This is great. Everything in the thug kitchen book is great. I am not a vegetarian. Plus its easy.
Will post a picture |
