I just posted on the Halloween dinner thread that DH is objecting to slow-cooker pulled pork sandwiches for dinner because he thinks bbq sauce is typically too sweet. I'm buying a vinegar-based coleslaw but he doesn't love that either. Any other ideas for fairly healthy, quick sides to go with this and make it slighly more palatable to him? |

Yes. He can come up with something. Baked beans, green beans, black beans & corn, homemade french fries.... Also, get or make a North Carolina Style BBQ sauce (really the only true BBQ sauce ![]() |

I made roasted potatoes the other night with our pulled pork, sometimes will do mashed potatoes. DH has made cornbread for a side before and I might consider green beans too. Usually I do this rub:
2 tablespoons paprika 2 tablespoons light brown sugar 4 teaspoons kosher salt 1 1/2 teaspoons chili powder 1/4 teaspoon cayenne 1/4 teaspoon dried oregano 1/4 teaspoon dried thyme 1/4 teaspoon ground cumin 1/4 teaspoon freshly ground black pepper 1/4 teaspoon garlic powder 1/4 teaspoon onion powder and serve with a vinegar-based sauce. |
That's what I told him, but I know his answer for tomorrow and it's not an option. So, I'm over-riding his objections and going forward, but kind of like with a picky child I'm trying to think of an acceptable side so he'll at least eat something. |
Think of all the types of sauces you can put on chicken wings. You could use anyone of those as a sauce for your pulled pork. You can also make pulled pork with no sauce and then have a variety of sauces on the side. Lot of people for example just like plain ketchup on their pulled pork.

Quick Lime and Cilantro Slaw
1?2 head of green cabbage (about 1?2 pound) 1 small carrot 2 tablespoons lime juice 2 tablespoons rice vinegar 1 teaspoon olive oil 1?8 teaspoon salt 1?3 cup chopped cilantro Finely cut the cabbage, use a peeler on the carrots mix it all together. Mix the other stuff up separately, add to the cabbage mix and toss. You can add finely chopped apples if you want. |
