To bring to a gathering tomorrow. The host mentioned she does not like tomatoes or mushrooms. Ideas anyone?
Omit the chickpeas and this is easy (and good) as hell. http://smittenkitchen.com/blog/2014/05/carrot-salad-with-tahini-and-crisped-chickpeas/
Fruit salad. Buy some fruit, dice them, serve. Doesn't get much easier than that.

This is my absolute favorite. I have taken it to many get-togethers and it always gets rave reviews:

Thinly sliced cucumbers, thinly sliced red onions, feta cheese, and Italian dressing or veg oil & rice vinegar.
Taylor farms sweet kale salad kit from costco
Spinach, mixed greens, strawberries (or grapes, or chopped fruit of choice), sliced cucumber, chopped bell peppers, walnuts, toasted pumpkin seeds, raspberry vinaigrette and feta cheese.
Wow that sounds amazing! |
Mix of young/sweet lettuces and cucumber. Trader Joe's has the sweet lettuces right now. Universally pleasing -- almost anyone who eats salad will eat these two things. Kid friendly for same reasons and visually appealing.
Spinach, crumbled feta, dried cranberries, pecans (or walnuts) and raspberry vinaigrette dressing. Make it all the time. If you have apples on hand, you could dice one up and add it.
