Potato soup recipe

My husband has requested potato soup for dinner one night next week. Anyone have a favorite recipe that is relatively quick for a weeknight?

This one is easy. I make this all the time.

soup or chowder? The more traditional ham and potato soup is a chowder. Something like this: http://damndelicious.net/2013/12/16/potato-ham-chowder

Best ever and quick if you bake the potatoes ahead or have leftovers

Cream, half-and-half, or whole milk is the key. Not that it's healthy, but that's the trick at restaurants.

I don't know about healthy, but it's easy and delicious:

We left out the celery because we don't like it, and used white American cheese.

I have never made this, but if I were going to make potato soup, it would have to be a copycat of Outback's, which I really love (found this: http://www.food.com/recipe/outback-potato-soup-253163)

But my DH has decided he no longer eats white potatoes, so if I made it, it would have to be for myself....

The chunky tomato potato soup above sounds good, but it's not what I think of when I think of potato soup.
