I made a whole chicken in the crock pot (idea I found on here) and it turned out great, but we ended up with other dinner plans, so I just removed all the chicken from the bones and put it in the fridge. What should I make with it tonight? Recipes appreciated

OP here, I actually did do that. Simmered it overnight in the crockpot and it was great this morning. But yea, why does it have to be free range? |
| Real simple has a really yummy green enchilada recipe. Delish. The only pain is it used salsa verde, which sometimes I have trouble finding. |
