Easy vegetarian appetizer

I need some inspiration for an easy vegetarian appetizer to serve 20-25 people. My usual go-to's are caprese bites, fruit with dip, chesse platters, etc but I need it to be something a bit more substantial.

My in laws make a melted cheese dish that is AWESOME! It's a cup of Jarlsburg shredded, 1 cup sweet onion diced, 1 cup mayo.
Mix together and bake in oven (350) until golden on top. Serve with some crackers. Amazingly yummy

I've made a white bean dip before that was very simple and got raves. I can't find the exact recipe now, but it was something like this:

You also can't really go wrong with homemade hummus and baby ghanoush

Spinach and artichoke dip is easy and usually a hit with everyone.

Spanakopita. Doesn't seem simple but since you make a bit tray and just cut squares, it really is easy.

Then serve with veggie and hummus dip tray to match theme.

White Bean Dip with Pita Chips


Ingredients
5-6 pita breads, cut into eighths
2 tablespoons, plus 1/3 cup olive oil
1 tsp. dried oregano
1 ½ tsp. salt, plus more to taste
1 ¼ tsp. freshly ground pepper, plus more to taste
1 15 oz. can cannellini beans, drained and rinsed
¼ cup loosely packed flat-leaf parsley
2 tablespoons fresh lemon juice
2 garlic cloves

Directions
Preheat oven to 400. Cut each pita in to 8 wedges. Arrange wedges
on large baking sheet and brush with the 2 tablespoons olive oil (or spray with olive oil flavored
Pam). Mix 1 tsp. salt, 1 tsp. pepper, and oregano together and sprinkle over pitas. Bake for
8 minutes, then flip and bake for 8 more.

In a food processor, combine beans, parsley, lemon juice, garlic, and
remaining salt and pepper. Pulse until the mixture is coarsely
chopped. With the machine running, gradually pour in the remaining
olive oil until the mixture is creamy. Season the purée with more
salt and pepper to taste.

7 layer dip is definitely easy.

My favorite is spinach artichoke dip. I always look for a reason to make that one, and a crowd of 20-25 is the perfect reason.
