Can I cook with wine I opened a week ago?

Red wine opened a week ago, not refrigerated but re corked with a rubber stopper. Plan on using it for pot roast.

Are you kidding? I use wine that is many weeks old for cooking. Definitely fine.

Yep - it helps if its a screwtop or you get a vacuum sealer. I keep wine for weeks that way.

And if its turned... voila, you can cook with it as vinegar!

If it tastes okay, it should be fine. But like PP said, it's basically vinegar once it's turned anyway. I hate wasting wine.

It is possibly a sin to waste wine, darling OP. Please make good use of your leftover wine and report back to us regarding your culinary success.
