We eat so much chicken

And I'm getting sick of it! It's easy to cook, quick, and inexpensive (ie organic chicken legs are less than $4 usually).

How do I get out of this chicken rut?

Feel the same way about salmon!

Shrimp stir fry
MYO baked potatoes (let everyone do their own toppings: chili, sour cream, onions, cheese)
Paninis for dinner
Spaghetti carbonara

I get the frozen fish from Trader Joe's: cheap. I just throw in the fridge to defrost during the day, and bake in the toaster oven. That's a frequent protein, but I can mix it up (salmon, cod, turbot).

pork.. the other white meat. Thin slice pork with panko crumbs. Pretty good.

Re: the frozen fish--do you ever feel it is soggy after defrosting? I have that problem half the time.

We do Meatless Mondays and Fish on Fridays so that we're not eating chicken all the time. Beans (especially dried beans) are even cheaper than chicken.

What we are trying to do is reduce the *amount* of chicken, replacing it with more veggies or beans. I guess the hope is to eventually have a very small amount of meat with a large amount of veggies.

Re the fish, we buy the frozen filets at Whole Foods, which are pretty cheap too, if I remember correctly. I don't find it soggy, but we usually bread it lightly with whole wheat or almond flour and fry in olive oil and butter mixture, so maybe the breading absorbs the sogginess!

Ground turkey or beef are inexpensive, and quick-cooking meats. You can do meat sauces, sloppy Joe's, shepherd's pie, meatloaf, meatballs...
