Zucchini for picky kids

Anonymous
We have two great eaters and one terrible one. Any tried and true recipes to get the picky one to eat the 100s of zucchinis we are picking from our garden ? I've never cooked the vegetable in my life before this summer.

Do you think they would eat these:

Looks like a good ketchup pairing to me. DD would probably love it, but she's not a picky eater.

I saute zucchini slices and add it to tomato sauce to serve over pasta. My kids, who wouldn't eat zucchini on its own, really like it.

Definitely zucchini fritters or pancakes.
Also try zuch salad. Use a peeler to peel the skin off. Then continue prelim to get long strips until you hit the seeds (turn the zuch as you go). Toss with red onion and feta cheese and olive oil. This maybe more for grown ups but some kids like the long strands.

I take prepared pancake mix and add a small amount to any shredded veggie and make vegetable pancakes. I use just a very small amount. I will normally make some sort of sour cream mixture....

If I may hijack this, can zucchini be added to a brownie mix? I know people make zucchini brownies, but is there a conversion to add them to a store bought mix, to make them (a very tiny bit) healthier?

Zucchini Parmesan

Shred zucchini into "pasta" strips and cover with tomato sauce, meatballs, etc.

Why does the kid who doesn't like zucchini required to eat it? It's not as if it has unusual nutrients that aren't obtainable in other foods.
