The zucchini and cucumbers from my garden are growing out of control! Anyone have any recipes/ideas they could share?

Get a Spiralizer, check out that blog called Inspiralized, and go to town. I just started making Zucchini pasta noodles this month and it's literally all I want to eat right now. SO fresh and light and yet filling and delicious. Practically any pasta in the world can be swapped out for zucchini noodles. AMAZING.

Chopped cucumbers, halved cherry tomatoes, feta cheese, and Italian dressing (or oil, vinegar and herbs) - my favorite salad

Zucchini bread/muffins

Get one of those spiralizer things and treat the zucchini like pasta

Shred the zucchini using a cheese grater or shredding disc of a food processer, sauté with sliced onion, garlic and shredded kale

The other night, we chopped up half a zucchini into long fry shapes, dipped them in egg wash and then in bread crumbs (panko makes them crispy) and baked them in the oven. I think it was like 20-25 minutes at 375 or something. Zucchini fries!

We plan to slice up the other half of the zucchini, marinate and grill.

We also did chicken fries (chicken breasts cut into long fry shapes) and regular fries.

Sautee zucchini with a little salt and pepper - then shave a little Parmesan cheese and lemon zest over it. Simple and tasty.

Thanks for all the suggestions! I will definitely try the zucchini-pasta thing. Can you use it for cucumbers too?

Also thinking about zucchini bread, do anyone have a recipe for really moist zucchini bread? I always feel like mine is always too dry.

You can spiralize cucumbers too - you could make a great vinaigrette dressing and cucumber ribbons. YUM.

Fried shredded zucchini cakes. I add feta and olives to mine.

Also sautéed zucchini with adobo seasoning

Alton brown s cucumber al fresca. Should come right up on google. Delicious.

Slice cukes into slivers. Lemon juice,salt,red pepper flakes. Use plenty of each. Addictive.

Taiwanese restaurants make an incredible spicy cucumber salad. It has lots of garlic and red pepper flakes.

For zucchini, you can shred it into pasta sauce for added veggies without the taste.

Ha! I've had two neighbors leave me bags of zucchini in the last week! Plus I have a zucchini plant of my own.
