I made homemade pancakes topped with sweet, ripe nectarines this weekend, and they were fantastic. Why have I been using Aunt Jemima all this time?? I am already looking forward to making my family blueberry pancakes next weekend.

I slow-roasted tomatoes in the oven this weekend, then used them to make a BLT. Added some fresh basil to the mayo I was using. Divine!

I like a fresh mixed green salad topped with LOTS of 1 day old tabouli. Ugh so so good. And random I know!

The walnut-honey thing sounds amazing! Definitely going to try that this weekend!

I really don't know. That stuff isn't even maple syrup (which, if you get the real stuff, is pretty heavenly), it's artificially flavored and colored high fructose corn syrup. Gross.

I was out yesterday and tried one of the new Blackberry Mojito Tea Lemondes yesterday at Starbucks. I had to stop an hour later at a different shop to get another. Apparently they will give you a refill for $0.53 - yay! It was so good!

I wasn't just using the Aunt Jemima (sp?) syrup, but the pancake mix!!! Or whatever brand it was. Convenient when all you have to do is add water, yes, but it so, SO pales in comparison to those awesome homemade pancakes with fresh fruit. I froze the extra pancakes, and my toddler's dinner last night was a warmed pancake topped with a fried egg. The pancakes are thick, almost like a biscuit, and ridiculously good with a runny egg on top. If I weren't watching my calories, that would have been my dinner too!
