Roasted herb potatoes with lemon
Polenta Spinach salad with olives, tomato and feta Rice pilaf |
| summer squash and zucchini, cut into discs, sauteed with a bit of sprinkled marjoram (dried works well; fresh optional) |
| Mashed cauliflower with cream cheese or white cheddar |
| Slaw |
| Make zucchini and summer squash "pasta" using one of those veggie spiralers. Serve with a fresh tomato sauce. |

One of my favorite meals is a West African dish that consists of grilled whole fish, a couscous-like grain made of casava (just use couscous), and a "sauce" made of raw chopped peppers, onions and tomatoes, lightly and simply seasoned.
I also really love a mayo-free potato salad with fish - boiled potatoes, some chopped onion, olives, olive oil and vinegar/lemon. |
