making soup into a meal

Anonymous
What's the easiest, fastest, made with pantry ingredients, side dish for soup? I love making soup - quick and easy when there's nothing in the house. I could eat it as a meal. But the family seems to think there should be something with it. Help me out!

My husband is the same way. I serve it with a side of crusty bread and a hearty salad.

Popovers, biscuits, cornbread.

carrot sticks/sliced peppers or cucumbers if you don't feel like making salad.

I try to shoot for a veg and a carb. Often times, it's just a carb.

Examples:

Chili: "veg" = garnishes like shredded lettuce, cheese, onions, avocado slices, sour cream, jalapenos and carb = cornbread or tortilla chips

Chicken Noodle: Crusty french bread and crudite (carrots, celery, snap peas, peppers, etc...)

Butternut Squash or something similar: roasted veg like brussels sprouts and crusty bread

Black Bean: simple green salad with corn, avocado, grape tomatoes and tortilla chips or simple plain cheese quesedilla triangles

Broccoli Cheese: roasted carrots (cut into long strips and roasted in oven in olive oil, s and p, and a bit of garlic), crusty bread

We eat veggie soups, but yours may be similar.

Serve with a sandwich, a hot dog or hamburger. Salad and bread. Serve in a bread bowl. Make chili or add some sort of meat or poultry to your soup.

Agree with the carb/sandwich idea. If you want really fast and easy, sometimes we do crackers with hummus as a side. Bruschetta is also easy to make and can go well with soup.

+1 for grilled cheese
I also like a hearty salad (something with spinach or chickpeas), or sliced veggies and dip/hummus.

It sort of depends on what is in the soup. A heavier soup like chili or beef stew, I'd stick with a salad or crusty bread. A lighter soup, I'd be more tempted to add the grilled cheese sandwich.

In addition to the above, which are great:

Rice (can be added to the soup, too)

Poached egg on top (or drop eggs into the soup)

I like crusty bread (like garlic bread you'd have with spaghetti). In fact, just had that tonight.
Sometimes I make egg noodles with butter, parsely, etc. They can be added to the soup too.
