Summer appetizer ideas

Having a little cocktail party this weekend. Would love ideas for fun, summer appetizers. Nothing too heavy.

Shot glasses of gazpacho.
Bocconcini with basil and cherry tomatoes.
Cucumber slices with hummus.
Spicy watermelon and mango.

My go to is either skewers of tomatoes and mozz and basil leaves (with EVOO, salt, pepper) Or tomato and mozz caprese with pesto

A different take on the watermelon salad--just had a delicious one with watermelon, jicama and mint with an orange juice/lime zest/lime juice/ honey dressing. Also homemade guacamole with pita chips. Guacamole made with fresh lime juice, diced tomatoes, diced onion, jalapeƱo peppers (no seeds, too spicy) and avocado and salt.

A variation on the caprese is a cherry tomato, feta and a black olive with olive oil. I also like melon and prosciutto balls.

Toothpicks for "snack" size, or on kabob skewers if meant more as a "main". Costco sells marinated mozzarella balls that make things easier. You can drizzle oo, salt, pepper, balsamic, or pesto. always delicious, just make sure there's some kind of salt element to add "flavor"
