Weeknight dinner for me, DH, and our 5yo. We often eat sandwiches for lunch, so don’t want them for dinner too. Access to microwave at pool is spotty (meaning it’s not always functioning so I can’t count on it). Other than a variety of salads, I’m hitting a wall with ideas. And we’d like more hummus and pita. Meal can be kept in fridge all day since we drive past house from work to pool. Thank you!

Maybe you should bring hummus and pita in a cooler. Or fried chicken, or cheese or fruit or a thermos of soup. I am not sure I understand your problem? |

Grilled chicken and tomato/fresh mozzarella/basil salad...
Grilled flank steak with black bean/corn/tomato/lime/cilantro... Pita with hummus, olives, sliced cucumbers, carrots... Chicken or tuna salad in pitas... The sky's the limit here. Anything that can be made ahead and eaten cold/room temperature sounds great. |

If your child will eat foods mixed together (to those laughing at that comment, a lot of kids like their foods separated), then cold green and pasta salads are your friend. Endless combos depending on your tastes, no recipe required:
1- greek salad: romaine, grilled chicken, tomato, cukes, feta cheese, crumbled pita chips - dress with bottled greek vinegrette or evoo, lemon juice, s/p 2 - italian: pasta, cubed mozzarella, cherry tomatoes, basil, evoo and balsamic if you like 3 - tex mex: grilled flank steak sliced into strips, romaine, corn, tomatoes, avocado, black beans, shredded cheddar, crumbled tortilla chips 4 - asian: tofu, rice noodles, scallions, sesame seeds, broccoli, tossed in peanut sauce or soy garlic dressing And so on! And if your child doesn't like foods mixed, you could always put some of the ingreds into separate containers. |
| which pool? A lot of pizzas get delivered at most of them. Or just think beach food. Nothing that will spoil. |

| Baguette. Cured meats. Cheese. Olives. My kids love this meal! |
| Tortellini tossed with olive oil, sliced chicken sausage and red pepper strips, guacamole, salsa and chips, cheese/sausage/crackers, grilled chicken wraps, caprese salad and baguette, make bean burritos ahead of time, nuke when you get home and then wrap in foil to keep warm to eat at the pool, hot dogs and buns wrapped in foil to keep warm, and yeah, the old standby pizza pool delivery. |
