But even on your schedule, you can still do it if you pre-chill the coconut milk. Tell your hostess that you are making a shortcake for the strawberries and suggest that she sprinkle some sugar on the strawberries and put in the fridge to top the shortcake. If she won't, then you can make a quick sugar syrup http://www.foodnetwork.com/recipes/simple-sugar-syrup-recipe.html then toss the strawberries into the syrup, nuke for about 15 seconds and stir. It won't be as good as if the strawberries marinated for 2 hours, but it will do. |

1 can of coconut cream or full fat coconut milk. It has to be chilled so the fat will become solid. That takes a couple of hours, so I like to keep a can in my fridge. Once thoroughly chilled, drain off liquid and scrape cream into a bowl. Add: 1 teaspoon vanilla extract 1-2 tablespoons of sweetener (I like agave nectar) Beat on high speed until creamy, about one minute. Use right away. Leftovers can be stored in an airtight container in the frigid for a few days. Beat with a mixer to make creamy.again. |
