Moby Dick seasoning?

I'd like to try and recreate some of the flavored similar to that on their Chicken kebabs. Does anybody have a guess as to what they use or how I could do this? Bonus points if you have tips to make the yummy tomatoes too. Thanks!!

My favorite place! I know there is sumac on the table. Perhaps they put some on the kebobs, too(?) Lemon? Olive oil? I really do not know BUT will ask when I go next time...it has been a while, and I am about due for my fix.

The chicken kebab recipe from Moby Dick was in the Wash Post a few years ago. It has lots of onion, ground up in the food processor. I searched and found this version, which looks right to me.
