Meal Ideas for a Beach Vacation (and food prepping advice)

We are leaving in two week and I can't seem to come up with any good ideas about what to make while we are at the beach. The hotel has a small kitchen (no oven) so I would like to make most of the dinner meals to save money. I would love some help coming with up quick and easy dishes that don't require too many spices or ingredients. The only thing I've come up with are tacos. If possible I would love to prep ingredients as much ahead of time and take it with us to save time in the evenings. We are vegetarian (no fish, eggs okay). Thank you SO MUCH for any and all ideas.

Do you have (or could borrow) a slow cooker that you could take? Google "vegetarian slow cooker recipes" and you might get some ideas.

We're also vegetarian, and if it were me, I'd go really simple and plan for meals that don't require a lot of prep. Omelets and salad; hummus/cheese/veggies/crackers; miso soup with some cubed tofu or edamame and rice noodles; spaghetti or pasta with sauce; veggie burgers and corn on the cob; etc. I think tacos are a great idea, especially since you can customize them and not get tired of them if you have them two nights in a row. I also love a good sandwich--some nice bread or a wrap, avocado, hummus, veggies, and I'm happy. Have a lovely time!

Pasta salad is good and easy (and makes a ton).

For a beach vacation, you probably don't always need a hot meal, right?

I'd do a prepacked salad, like a pasta or a grain/bean salad (or more than one)
Sandwiches
Tacos
Takeout pizza
Pasta tossed with pesto, green salad

Don't forget to do a version of shrimp boil or clam bake at least one night.

I shop at the beach although it is pricier there than back home. The first night we often eat out due to exhaustion from packing & travel.

GF mac n cheese is a favorite.

frozen (or homemade that you have frozen) felafel that you could cook in a pan?

When I know I'll need various spices on vacation I will measure them out at home and put them in a snack size ziplock.

I could help, but you are vegetarian.

We go to Corolla off road beach each year and I pre-cook/plan for two families for a FULL week ahead of time. I also don't eat rice, pasta, bread, or dairy! However, I do indeed eat meat and or fish daily.

The farm stands open in the summer and they have beautiful tomatoes, corn and all kinds of fruits and veggies. We enjoy buying fresh local produce and do not prepare ahead of time. Gathering the supplies and preparing it is part of the family fun.

Depends on the room setup. I have found that when we have a room that only has a small 2 person table that is close to the bedrooms,we tend to eat less involved meals in. We generally did mac n cheese cups in the microwave for the kids one or twice, sandwiches, yogurt, cheese sticks, fruit, and then really ate out for most of the meals and brought home leftovers.

I'm in awe. I'd love to see your menu and grocery list. (I can't even figure out how you fit it all in your car and cold.)

Sorry for my ignorance, but vegetarians eat eggs?
