Stuffed portabello mushrooms on the grill.
Stuff with whatever they can eat. I usually do spinach, minced garlic and onions, pancetta or some other yummy meat, bread crumbs, feta, cream cheese or shredded cheese, and drizzled with olive oil and balsamic and sprinkled with salt and pepper. For the paleo diet, eliminate the cheese, salt, etc. For the vegetarian, eliminate the meat. For everyone else, put in all the good stuff. VERY simple, even with modifying the two mushrooms for the special diet people. You are a good host. They are a PITA

| I like doing Mediterranean spreads - lamb sausage, olives, pita, hummus, tzaziki, tabbouleh, roasted veggies, feta etc. everyone can pick the parts they like and skip whatever doesn't fit. Go to whole foods and hit the olive bar. |
