"Mediterranean" Mushroom Recipe?

Anonymous
I'm hosting a Mediterranean night at my house tomorrow, and realized I have a huge package of mushrooms in the fridge that I need to use in the next few days. Does anyone have a Mediterranean-flavors-inspired idea for a mushrooms side dish?

Just fry in olive oil, garlic, salt, pepper, herbs.

I was thinking balsamic and some oregano flavors. Can you mix mushrooms and feta? (Can you tell I hate wasting food?) How about blanched green beans, sautéed mushrooms mixed with feta and rosemary? Does that sound gross?

Don't do oregano. It makes everything taste like pizza.

This. Make the herb rosemary (a little goes a long way) and finish with a quick splash of balsamic vinegar.

Are they whole mushrooms? If so, pop out the stems and fill the inside of the caps with feta. Drizzle on a bit of olive oil and shake on a tiny bit of rosemary. Roast in the oven until the cheese is melted.

I went with this-- thought of the stuffing with feta, but seemed more work that this!
