Chicken and Coconut Milk

Does anybody have any good baked chicken recipes that call for coconut milk? I'm feeding people who only eat organic and I have organic chicken and coconut milk on hand.

I don't have one off the top of my head, but could you do something liked baked chicken with some kind of coconut milk curry sauce?

I throw a can of coconut milk, 1-2 frozen chicken breasts, and some spices in the crock pot (bay leaf, mustard, garlic, other Asian spices).

get some red or green curry paste, basmati rice and (organic -- which simply means more expensive) green beans. Walla.
