| I love roasting a big tray of veggies with a little olive oil, salt and fresh ground pepper. So simple. So delicious. Broccoli, onions, asparagus, some garlic cloves, butternut squash...so many options. You can buy many pre chopped too. |
This is what I would do...a mixture of potatoes, onion, peppers and zucchini. |
I do this all the time, especially in the fall/winter, and have to move myself away from the pan because I could eat 1/2 a tray or more of roasted vegetables. I like them slightly crispy on the edges...if it weren't so late right how I'd probably make some tonight! |
