Vegetable heavy dish?

Been out of town on business for a week, in a meat-centric place, and am now in the mood for vegetables. Any ideas that are not salad and don't include wheat or non-aged dairy? The easier the better

Olive oil, minced garlic with sauted red onions, vertically sliced baby carrots, red bell pepper, topped with scallions, red crushed pepper and salt.

Vegetable soup/ sautéed vegetables/ mashed cauliflower/raw vegetables with guacamole or hummus.

I love roasting a big tray of veggies with a little olive oil, salt and fresh ground pepper. So simple. So delicious. Broccoli, onions, asparagus, some garlic cloves, butternut squash...so many options. You can buy many pre chopped too.

This is what I would do...a mixture of potatoes, onion, peppers and zucchini.

I do this all the time, especially in the fall/winter, and have to move myself away from the pan because I could eat 1/2 a tray or more of roasted vegetables. I like them slightly crispy on the edges...if it weren't so late right how I'd probably make some tonight!
